MUNG BEANS

Mung beans may seem like a very ordinary common ingredient used for making desserts; little did we know that it has excellent detoxing properties and it is considered a super food in TCM!

Here is our recipe for this delicious and nourishing super food dessert:

MUNG BEAN BARLEY SOUP RECIPE (SLOW COOKER VERSION)

INGREDIENTS

  • 150g sweet potatoes (cut into medium cubes)-

  • 100g mung beans (wash thoroughly)

  • 100g barley (wash thoroughly)

  • 100g candied winter melon strips (or to taste)

  • 1 knotted pandan leaf

  • 6 cups of hot water

HOW TO:

1) Place all the ingredients into a slow-cooker. Add the water. Stir the ingredients.
2) Cook on high until the beans are tender. It usually takes about 2.5-3 hours.
3) Add some rock sugar for sweetness.

Add more water if you prefer more soup/less chunky.
